Simple Vanilla Cupcake Recipe

The vanilla cupcake. The simplest but one of the most beautiful bakes ever. Fluffy and moist, whether you are eating these warm from the oven or topped with a beautiful swirl of buttercream, they are always a hit!

This has been my go-to recipe for a vanilla cupcake as long as I can remember. And now I use it when baking with my children too. Easy to pack in lunchboxes for school, or take to the park for a picnic. If we have a bit of time to spare once they’ve cooled, we will often topped and decorated with anything from jam and whipped cream to buttercream, sprinkles and even chocolate spread! It makes for a fab fuss free weekend activity, and is a fabulous way to get kids in the kitchen baking!

Friends, these as so simple to make, with ingredients you’re likely to have to hand. Fun to eat, because.. well… cupcakes! Honestly friends, what’s not to love?!

Moist and fluffy, delicious and simple vanilla cupcakes!

Ingredients

  • 125g self-raising flour

  • 125g caster sugar

  • 1/4 tsp bicarbonate of soda

  • 125g unsalted butter at room temperature, cubed

  • 2 large eggs

  • 1 tbsp milk

  • 1 tsp vanilla extract

Directions

  • Preheat your oven to 170C/325F. Line a 12 hole muffin tin with cupcake liners.
  • Sieve flour, sugar and bicarbonate of soda into your mixing bowl. Mix on low to combine, then turn the speed up to high for 1 minute.
  • With mixer on low, slowly add in milk and vanilla. Once combined, beat on high for another 30 seconds.
  • Spoon into your prepared cases, then bake for 22 minutes. Cool completely before decorating.
