I don’t think I’ve met a person yet who doesn’t like the cinnamon and sugar mix that is the hallmark of snickerdoodles. The chewy middle coupled with the crunchy sugar exterior of these cookie bars makes it impossible to stop at just one piece! Personally, I find the combination of them all so cosy and comforting, and certainly one my family have happily indulged in too.

How to make this Snickerdoodle Cookie Bars recipe

Making this Snickerdoodle Cookie Bars recipe is so simple and uses ingredients you likely already have in your kitchen cupboards. Simply beat your butter, sugar and salt together until well combined and fluffy, then mix in your egg until well mixed in. All that’s left then is to sift in the flour and cinnamon before a final mix. Press the mixture into your baking tin, top with the cinnamon sugar topping and bake!

I find these are best left to cool a little before cutting into squares. Make sure you use a sharp knife to get clean cuts too.

Ingredients

  • For the cookie bars
  • 110 g (½ cup) unsalted butter, at room temperature

  • 200 g (1 cup) sugar

  • 0.25 tsp salt

  • 1 lrg egg

  • 1.5 tsp vanilla extract

  • 160 g (1 cup) plain flour

  • 0.5 tsp ground cinnamon

  • For the topping
  • 1 tbsp sugar

  • 1 tsp ground cinnamon

Directions

  • Preheat your oven to 180C/350F. Line an 8″ square tin with baking parchment and set it aside.
  • In a large mixing bowl, mix together your butter, sugar and salt until smooth and fluffy. Add in the egg and vanilla and mix again until totally combined. Sift over your flour and cinnamon then stir together to combine. Your mixture will be very soft and sticky, this is how you want it to be.
  • Tip your mixture into your prepared pan and press the mixture down evenly in your pan. I use a spare piece of parchment paper to help flatten the sticky mixture so it doesn’t get stuck to my spatula or fingers!
  • In a small separate bowl, add the sugar and cinnamon for the topping and stir together. Sprinkle it evenly over the top of your cookie bar then pop in the oven and bake for 20-25 minutes. Cool before cutting into squares and enjoy!
