Nutella Banana Muffins

If your kids love Nutella, but not bananas (like my daughter), I have a solution for you: Nutella banana muffins!

Now every household I know ends up with black bananas at some point. Even with all good intentions, one or two will often slip through and end up blacker than anyone would want to eat them. Whatever you do, don’t throw them away! They are brilliant for banana bread but also for these delicious Nutella banana muffins I’m sharing with you today 🙂

These muffins are tender and wholesome. They’re a reminder of how amazing homemade goodies are. And, for me, this is what childhood memories are made of. They’re easy and fun to make (possibly messy, with sticky but yummy Nutella fingers everywhere!), but quick too, and are always worth the make.

Plus, if you’re a parent, you will know all too well how often our little darlings can change their mind on foods they like and dislike! So if you find yourself with a surplus of bananas, like I often have, here’s another way to use them up.

I feel like I should put in a disclaimer though. You absolutely do taste the bananas in these muffins: bananas do have a really strong flavour after all. But the Nutella compliments it so well, almost drawing attention away from it, so any fussy eaters will gobble this all up without fuss.

Plus, did I mention they’re yummy scrummy and will be inhaled by young and old alike?

Oh, and any parents tearing their hair out with fussy eaters, here is my little bit of advice: keep trying and offering and know you’re not alone! Hang in there, you’re doing awesome! 🙂

Anyways, back to these nutella banana muffins.

I love these muffins because they have brought so many memories for us as a family. We’ve enjoyed them in lunchboxes, on school trips, park trips and even shared them at bake sales. And they are always a delight to everyone who has eaten them.

Honestly, if there ever was a winner of a muffin, this is it friends! 🙂

As always, thanks for joining me again today.

Happy baking, friends!

Easy and delicious for little helpers in the kitchen!

  • 250g (1 cups + ½ cup + 1 tbsp) plain/all purpose flour

  • 90g (7/8 cup) oats

  • 150g (3/4 cup) light brown soft sugar

  • 2 tsp baking powder

  • 1 tsp bicarbonate of soda

  • 1/2 tsp salt

  • 1 large egg

  • 120ml (1/2 cup) buttermilk

  • 60ml (1/4 cup) oil (I used vegetable)

  • 2 overripe bananas, mashed

  • Nutella!

  • Preheat your oven to 180C/350F. Line your muffin tin(s) with muffin cases and set aside.
  • In a large bowl, sift together all your dry ingredients and set aside. In a separate bowl or large jug, break in your off, then mix in your wet ingredients and mashed bananas.
  • Pour your wet ingredients into your dry and fold in carefully, mixing only until just combined (see note below)
  • Put mixture into your prepared cases, filling 1/2 – 2/3 full. Place a little dollop of Nutella in the top of each muffin and gently swirl in. Bake in your preheated oven for 17-20 minutes until done.

  • It is REALLY important not to overmix your muffin mix when you put your wet and dry ingredients together. Overmixing will result in a tougher bake, not lovely and tender as you want!
  • Warming up your Nutella a little will make it more spreadable and so easier to swirl through the top of your muffins.
