For those of you who know me, you’ll know one of my biggest indulgences (and first loves) in life has always been, and will always be, chocolate. Naturally, it goes without saying then, that when baking I am drawn to all things chocolate. From truffles to fudge and cookies, anything with chocolate in will get 110% of my attention! 😛

So of course, when putting together recipes to share with you, my friends, I had to include my chocolate chip brownies recipe!

I remember trying a brownie for the first time, expecting something lighter like a cake, and just being lost for words when I tried it (this is a big deal, as some of you will know I do like to talk!). Honestly, it really was love at first bite. The gooey chewy texture, somewhere between a cake and a cookie, totally captured me and I was hooked! This wasn’t really a surprise to me as I’m a big fan of my food being more undercooked than over anyways: from brownies and cookies to steak and even toast (my husband jokes I like my toast looking anaemic!). But hey! To each their own, right?

Anyways, back to my chocolate chip brownies recipe.

For me, a good brownie needs to be two things: indulgently chocolatey and super fudgey. These tick both those boxes. In fact, they have been known to have converted sceptical brownie-haters into “I just can’t get enough of these brownies!” types!

Chocolatey, gooey, heavenly brownies! Yum!!

Ingredients

  • 100 g (¼ cup + 3 tbsp) unsalted butter, melted

  • 100 g (½ cup) light brown soft sugar

  • 125 g (½ cup + 2 tbsp) caster sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • 40 g (¼ cup + 2 tbsp) cocoa powder

  • 60 g (¼ cup + 2 tbsp) self-raising flour

  • 200 g (1-1¼ cups) chocolate chips, dried fruit, nuts, etc

Directions

  • Preheat oven to 170C/340F. Line a 8″ square tin with parchment paper and set aside.
  • Whisk butter and sugars together in a large mixing bowl. Add in the eggs and vanilla and whisk again. Sift in cocoa powder and flour, then mix through before adding in your chosen extras and mix to combine everything together.
  • Pour the batter into your prepared tin and bake for 25-35 minutes for chewy brownies or 35-40 minutes for firm brownies. Cool in your tin before cutting into squares.
